Bored of sausages and lidl burgers? Or maybe you have a few veggies in the family. If you are looking for fresh BBQ ideas, this post is for all of you who want to spice up your bbq, wow your dinner guests and get the kids to eat something healthy and wholesome. Whatever the plan, eating outdoors around the pool is part of the fun of renting a villa in Mallorca.
Pretty much all our Mallorca villas have pools and bbqs outdoors, so the stage is set! All you have to do is get the charcoal in and track down a few choice ingredients.
This is one our favourite bbq ideas, not least because it's a totally mad. Who would have thought you could barbeque a watermelon? But, mostly because it is truly and surprisingly delicious!
Cut the watermelon into thickish wedges. Make a mix of lime juice and zest, honey and olive oil and brush it all over the watermelon wedges. Put them on the grill. When you start to see grill marks, flip the wedges and brush more lime mix onto the other side. It takes about 2 minutes a side. Once grilled, sprinkle sea salt and mint over the top.
A spicy alternative for seasoning is brown sugar, lime, and cumin. Serve it alone, with a greek-style salad or a scoop of icecream.
A delicious, healthy and unusual bbq idea, salmon skewers are easy to prepare and great with a simple green salad.
Cut the salmon into chunky cubes.
For the marinade, mix together the basil, thyme, parsley, olive oil, salt, black pepper, lemon juice, lemon peel, garlic and poppy seeds in a bowl, then pour over the salmon and leave for half an hour.
Make up your skewers, you can add whatever you like really, but the simplest form of this rather wonderful recipe is to place about 4 cubes of salmon with slices of lemon between.
Cook for 2 minutes a side, keeping the salmon moist by brushing it regularly with the remaining marinade sauce.
King Prawn and Pineapple
First of all, make sure you soak the wooden skewers in cold water to stop them burning during cooking.
Mix the prawns with chilli, garlic and ginger, cover with clingfilm and marinate in the fridge for a couple of hours, or better still, leave to marinade all night. Separately, mix the pineapple with ginger and sugar.
Once it's all ready, thread the prawns, pineapple and lime wedges onto the skewers, brush them with a little oil and cook for 2-3 mins on each side or until the prawns are pink and the pineapple is golden.
For tender leeks, or when your leeks are quite tough, blanche them first in salted boiling water. Then cut lengthways in half and clean them thoroughly, making sure there's no dirt caught in the folds. Once clean, drizzle the leeks with lots of olive oil and bbq on each side for a few minutes until you can see the grill marks.
Drizzle with lemon and serve with alioli.
Spicy Chicken Kebabs
Not so unusual to cook chicken kebabs on the bbq. True. But this spicy mix is so incredibly good that we had to sneak it in anyway.
Cut chicken breast into cubes.
For the spiciness, whisk together lemon zest, salt, paprika, garlic powder, onion powder, thyme, and cayenne. Place the chicken in a large bowl and mix in the spice mixture until the cubes are completely coated. Then you can skewer the cubes onto kebab sticks.
They are now ready to bbq, but before you put them on, brush the grill with vegetable oil. This will prevent it from sticking. Then grill the skewers, turning occasionally, until the skin is crisp and meat is cooked through.
Cut each cauliflower into thick steaks.
In a small bowl, whisk together olive oil, garlic powder, and paprika. Season the mixture with salt and pepper.
Before you place them on the grill, brush both sides of each steak with the olive oil mixture and cook until tender and both sides are charred in spots, about 8 minutes per side. Top each cauliflower with cheese and cook until melted.
Who said you can't cook a pizza on the bbq? This one is great for the kids, easy and fast and they can load on their favourite toppings onto the bases themselves. We used ready made pizza bases. It is always tastier to make your own of course!
Make a simple tomato sauce by blending whole tomatoes with a bit of olive oil, salt and pepper, and brush it all over your pizza bases. Grate plenty of parmesan cheese to spinkle over at the end.
Delicious pizza toppings are mozzarella slices, peperoni, ham, bacon and egg, spinach and egg, goat's cheese and pesto, figs and parmesan with rosemary. Summer Fruit Skewers
A bit like the watermelon above, fruit isn't the first thing that comes to mind when you plan a bbq. And this is very much an acquired taste, odd at first, but if you do like it, you will love it!
Skewer peaches, strawberries, and pineapple. Drizzle with olive oil and season with salt. Grill, turning occasionally, until fruit is tender and slightly charred, for 10 to 12 minutes. Drizzle with honey and a touch of lemon.
